White Chicken Chili
I love white chicken chile. It's great for when you don't have a TON of chicken. You can dress it up with your favorite toppings. It's flavorful, but not too heavy, and makes an EXCELLENT freezer meal.
Ingredients
- 3-4 chicken thighs (or similar amount of breasts)
- 2 cups broth or water
- 2 cups navy or other white beans
- 1 TBS Epicure Guacamole Dip mix
- 1 tsp cumin
- 1/2 teaspoon garlic powder
- 1 small onion, chopped
- 1/3ish cup green chile (or to taste - you know it goes)
Instructions
Add all to crock/pot.
CROCKPOT: cook on low 6-8 hours.
VITACLAY MULTICOOKER: cook on SOUP for one hour.
Remove chicken to chop or shred and return to pot.
Top with the sour cream, cilantro, and black pepper, corn chips, more green chile, shredded cheese,

I'm sure you could do this in a pot on the stove top, just watch the simmer.
