No. 1 Nugget Recipe

This gluten-free recipe provides an easy, healthy and DELICIOUS alternative to chicken nuggets. I love this because I use stew meat, which is already cut up into the perfect size, making my life easier AND this meal even quicker.

Cook Time 15 minutes
Total Time 35 minutes

Ingredients

  • 2lbs pork or beef stew meat or other favorite value meat, cut up into chunks
  • 1 packet Epicure Southern Baked coating

Instructions

Defrost pork.  If you want the nuggets to cook faster OR you have smaller fingers/hands/tummies OR your kids are used to a certain sized nugget, consider cutting the bigger pieces of pork in half. 

Dry off the pieces and add about 1/2 pound to a (completely dry) plastic bag filled with the Epicure Southern Baked coating.  Shake the pieces well.  Repeat with remain portions.

Place pieces on a baking sheet with space between each one.  Temps can vary depending on your preference and nugget size, but I baked at 375 for about 15 minutes. 

Notes

I used 2 pounds of pork. It's a lot!  If you don't need that much, do half at a time. Just keep the coating in the fridge or freezer until you use it again.

Add your favorite veggies for a complete sheet pan meal.  Try sweet potato home fries!

We made some homemade ranch dip to serve with this - yum!

If you only do ONE pound (and even if you do two), you will have extra coating. I like to coat the veggies with this. Try fries or zucchini sticks!
