Guacamole Soup
This soup is full of vegetables. It's a bright green and creamy and if you call it Guacamole Soup instead of Broccoli Soup, some kids just may love it. If your kids hate guacamole, don't call it Guacamole Soup. Call it Green Machine Soup or Leprechaun Soup or Princess and the Frog Soup or whatever will work.
This vegetarian soup is gluten and dairy free, too.
Ingredients
- 1-2 tablespoons butter or oil (optional)
- 1⁄2 medium to large onion chopped
- 2 cups favorite broth (more if veggies not almost covered)
- 1 can coconut milk
- 2 heads chopped broccoli
- 2 medium zucchini
- 1 medium avocado
- 2-3 Tablespoons Epicure Guacamole Dip Mix*
- cilantro (optional, but awesome if you're used to cilantro in your guacamole)
Instructions
You can saute the onion in oil and then add everything else (except the avocado). Or just toss everything in the pot (NOT the avocado) and bring to a boil. Let boil for "awhile." I know, I'm the worst recipe blogger ever. Just make sure all the veggies get soft.
OK, NOW add the avocado, chopped in at least a few big pieces. Blend it all up with a stick blender.
Serve with a few avocado slices or a dab of sour cream. Or a sprinkling of sprouts. Or a few chopped tomatoes. Ooooo, a cilantro garnish! Whatever you think your family will love. I like to add a pinch of the guacamole seasoning as a sprinkle of color and texture. See below.
Notes
*I like to cook the soup with 2 tablespoons of the Epicure guacamole spices and then add a third tablespoon after I blend it up for a little more punch and crunch. Maybe even sprinkle some on top of my bowl.
